Carb-free breakfast #1 - Egg stuffed avocado

Shout out to Mel Ting, who asked me to post some low carb and no carb breakfast ideas. Well, this is the first of 5 I'm planning on posting. This is a variation of a recipe from www.freshplanetflavor.com. Great website.

Egg stuffed avocado

Servings: 1

1 avocado, halved, pit removed
2 eggs
1 slice cooked bacon, cut in half
OR
1 slice deli ham, cut in half
2 tablespoons shredded low-fat swiss cheese
salt and pepper to taste

Preheat oven to 425.

Place the avocado halves in a baking dish (if you have one small enough to keep them touching and holding each other steady, that's best. If not, cut a tiny bit off the underneath peel to help them sit without tipping over).

Fill the center of the avocado with ham or bacon slices. Carefully crack the egg and add to the center. If you need to make the hole larger to accommodate this, do. Or do like I do and make a mess by putting the whole thing on there. It all tastes the same anyway. Sprinkle with salt and pepper and cheese.

Bake for 15 minutes or until white is set. Makes one generous breakfast or two servings for wimpy eaters. :-)
