Meatloaf Burgers with Tomato Gravy

Doesn't sound that appetizing, huh. I couldn't think of a better name, unfortunately. And, okay, keep in mind this isn't gourmet, but just something easy, quick and flavorful to fix for dinner with things you can keep in your pantry. You can make it the night before and bake the next day, or freeze it after step 5 in an oven-proof container (I like to get the foil ones at Dollar Tree, since they go easily from freezer to oven). Just add about 15-20 minutes more baking time to ensure the meat is thawed and cooks all the way through.



I like to serve with potato wedges that I toss in olive oil, rosemary, and a package of Lipton's Onion Soup Mix (yes, lots of salt, but you can make your own and control that. Recipe link below.)

The ingredients:

1 lb ground beef
1 lb mild Italian sausage (or if you avoid pork, you can just use another pound of ground beef)
1/2 cup minced onion
2 cloves minced garlic
2 tbsp Worcestershire sauce
1 sleeve crackers, crushed (I like bacon flavored Ritz, but regular Ritz or saltines are okay)
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp red pepper flakes (optional)
1 egg or 2 egg whites
1 tbsp Dijon mustard
1 can golden mushroom soup
1 can tomato soup
1 tbsp Worcestershire sauce
1 cup milk
flour for dredging
salt and pepper


The directions:

Preheat oven to 350 degrees.

1. Coat a 9 x 13 baking dish generously with cooking spray.

2. Mix the first 12 ingredients as if making a meatloaf.



3. Form the meat mixture into 6-8 patties and season with salt and pepper. Dredge in flour.

4. Brown both sides in a frying pan coated with cooking spray. Place the patties in the baking dish.



5. Mix together the soups and milk until smooth, then pour over the meat patties.

6. Cover with aluminum foil.



7. Bake for 30-40 minutes (add additional 15-20 minutes if baking straight from the freezer, and make sure the center of the patties reaches 140 degrees with a meat thermometer).

Serve with your favorite side and/or a salad.
